Most fruits contain much too much sugar content for me to even contemplate eating them.

Would I be reading this forum if I weren't diabetic?
Yes, I am a type 2 diabetic on oral meds and long acting insulin as well as very tight food plan and heavy exercise plan.

Most of the advertisements and suggestions for vitamin supplements, herbal supplements, and instant "cures" for diabetes are that much snake oil!!!

Some are, some are not. It all depends on what carrot does to your BG levels.

Even a few shreds of carrot in my salad sends my post prandial BG numbers over 200.

The best way to find out what a carrot does to you is to test BG, eat the carrot for snack time, after about 2 hours, test BG again!

I test all foods and recipes this way when I have to change meds! Different meds allow different foods.

Journal everything and you will see a definate pattern emerge.
