I have recently started experimenting with truffles. Not the chocolate type, but the real mushroom (fungus) that grows in the ground.

While visiting my dad in NJ I found a quaint little shop that sold various gourmet food. To my surprise, there were fresh Chinese truffles in the counter case which were cheap....only $10 per truffle! Now I've heard that Chinese truffles are no comparison to the French and Italian which run up from $25 per truffle. But I was excited to experiment with a new, and Chinese, ingredient!

Let me know if any of you have ever cooked with truffles and what you think. I'll let you know how my experiment turns out!

My new found truffle I learned was not of great quality, but it was fun to experiment with. I decided to use it to make truffle oil. I simply chopped it up into small pieces and placed it in a bottle of light olive oil. After about a month, the flavor came through. I poured just a little on some orzo pasta and it was delicious! It had a very distinct and pungent flavor, slightly similar to that of a porcini mushroom.

I did however have the chance to taste good truffle oil. One night out I ordered a dish with grilled shrimp and risotto, and it was delicious! The oil actually made the shrimp taste very woodsy and rich!

If you ever get the chance, try this wonderful oil. Most gourmet shops sell it, and it may even be in your local grocery store. I love it on pasta, but others say it's great on eggs as well. Enjoy!
