Hubby and I our celebrating our 4th anniversary this weekend. I need some ideas for a quick (and easy) romantic dinner. <img src="/images/graemlins/lovers.gif" alt="" />

Congrats! This is mine and my husband's 5th anniversary!

Take cornish game hens, stuff with alloutte cheese (garlic and herb variety) tie legs together with string like you would a turkey at Thanksgiving. Baste with olive oil. Roast at 350 for about an hour or until meat at thigh is no longer pink.

Serve by cutting open at the breast bone straight down the middle - the juices from the hen will mingle with the cheese and make this wonderful dipping sauce. Don't worry about forks, just tear the meat off with fingers and dip. Also have really crusty french bread to dip. If you want to serve with a simple salad, or just some crisp veggies to dip in the cheese sauce and keep it finger foods only.

Serve with Martini & Rossi Asti (the sweet sets off the spices perfectly!) or if you don't drink a pear sparkler (I like the pear better than apple - because the apple is too sweet.)

For dessert, keep the dipping theme going by getting strawberries and whipped cream or chocolate fondue.

A quick dessert I like is Black Cherry Trifle.

Get a store bought Angel Foodcake, 4 pudding cups like jello snack packs, 8oz cool whip, 20 oz cherry pie filling.


Cut the cake in half and crumb half in 2 quart bowl, put half of cherry on, then 2 pudding cups, and the half the cool whip and repeat with the rest. Top with chocolate curls. Chill for a few hours.

This is a weight watcher dessert so you can do low fat stuff. It looks like you spent hours on it.

We are hitting the seven yr itch in March.

Bekka, it looks like you came to the right place. These recipes are delicious and very festive! I hope you're inspired...I sure am!

Judith, your Black Cherry Truffle really epitomizes the concept of easy elegance, doesn't it? Is it as gorgeous as it sounds?

I called it a Truffle last time by mistake. They call it a Trifle. It is great. With Weight Watchers, I can have a cup full. So I walk on the treadmill and dream of eating. So my reward is this as a snack. A cup fills me up.

I'm a little confused on your directions....after cutting the cake in half, do I take one of the halves and crumple it up with the cherries, pudding and cool whip? Thanks

this recipe sounds delicious. I'm always looking for good ideas for cornish hens and this one sounds great.

One that I use often is, you take a small jar of currant jelly and melt it with butte, about 1 -1 1/2 sticks. (you don't want it thick, but you don't want it too thin either) Pour the mixture over the hens and let it cook in the oven in the jelly mixture at 350 for an hour. The hens cook in the melted jelly butter and come out so tender that it falls off the bone. The extra sauce is great for dipping the meat into. Enjoy!
