I hope you'll all read the review I wrote of Carla Fitzgerald William's cookbook, Rotisserie Chickens to the Rescue! How to Use the Already-Roasted Chickens You Purchase at the Market to Make More than 125 Simple and Delicious Meals.

It's such a useful cookbook. It's great for people who are inexperienced cooks and for people who aren't crazy about cooking. And for people who enjoy cooking and are creative in the kitchen, this book is a springboard to "cooking the rotisserie chicken way"...it can inspire you to dress up pre-cooked chickens in hundreds of ways and make the finished dishes your own!

I love the deli chickens as well. However, I always serve them the same way...with potato salad and rolls. I am going to click over to your article and read about this cookbook.

Something I really liked about this cookbook is, in addition to being chock-full of easy and quick recipes for dishes based on using deli chickens as an ingredient, it also inspired me to try my own ideas for practically instant meals.

There are all kinds of really fast, easy ways to serve it... like warming cut-up deli chicken pieces in pre-made turkey gravy and serving it with Stove Top Stuffing or instant mashed potatoes; or simmering it for a few minutes in a prepared marinara sauce and serving a quick pasta side. Or in a curry sauce with a pilaf side. The possibilities seem endless with the plethora of glazes, sauces and condiments out there to try!

It's a pretty unique book.

Want an easy recipe? Take a large can of crushed tomatoes, slice some rotisserie chicken, cook some sausage (even breakfast links work well, I tend to grill turkey sausage but of course that adds time to the prep)and add,
add diced onion and colored peppers and mushrooms, garlic powder and Italian seasonings to taste. You can cook this on the stovetop or crockpot it. Sprinkle with parmesan cheese before serving. It's delicious!@

My hubby (the chef in our house) uses the leftover meat from a weekend roast cut up in a Thai-style stir-fry during the week. It's very quick and the roasted meat gives a stir-fry a very different flavour, as does using smoked barbecue leftovers. I imagine this is very similar to using precooked deli chickens.

I think my all-time favorite deli chicken dish is quesadillas, made with white flour tortillas, torn pieces of chicken, sauteed onions and mushrooms, diced plum tomatoes, jalapeno rings and lots of yummy jack cheese.
