Since my husband passed away, cooking for one and maintaining a healthy diet have been a challenge.

I find that those bags of pre-washed spinach keep longer than lettuce. I recently found bags of shredded broccoli stalks, carrots and cabbage - I believe it's called broccoli slaw - in the produce department. I top the spinach with this and tomatoes, parmesan or shredded cheddar cheese, etc., olive oil and vinegar for a healthy salad almost every evening as either a side dish or a meal.

Bags of pre-cut broccoli florets and cauliflower are also available.
