For those who want to know what Texie is talking about:

In the BellaOnline Beer & Brewing Newsletter this week of 12/31/05, the Beer Fox "Beer News" announced that Pierre Celis, legendary brewer and founder of Celis Brewing in Austin, Texas in the 1990's, would be returning to Texas from his home in Belgium. In 2000, Celis Brewing was shut down by then partner, Miller Brewing, in a deal that sold the brand, and the rights to the Celis name, to Michigan Brewing. Celis' daughter Christine (and former President of Celis Brewing) says Celis is negotiating for a return to Texas. A confidentiality agreement does not allow further details at this time. He will be brewing Brussels White, Peach and Brussels Grand Cru.

According to Christine, Celis' return should be in the early part of 2006.

New news! Pierre Celis and his daughter Christine will be forming a partnership with Real Ale Brewing Company, Blanco, Texas. A new brewhouse is being completed at this moment!

A new line of beer created by Celis will be labeled "Brussels" and will include a White (5% ABV), Brussels Grand Cru (8.5-9% ABV), Cherry (3.5% ABV), Peach (3.5% ABV) and Raspberry (3,5% ABV).

High quality wheat from Luckenbach, Texas, USA will be used, with Kent Golding and Saaz Hops from Europe. The local water is similar to Hoegaarden water in chemical character. Fruit juices used in the fruit beers will be imported from Bulgaria and Romania - the same juice used to brew Bios/VanSteenberge Beers in Belgium. Brewing is expected to begin in April 2006, with head Brewer Tim Schwartz directing the symphony.

Two more little notes: #1 - Blanco is the Spanish word for "White." #2 - Pierre Celis just turned 81 on March 21, 2006. Woo-hoo!
