I just read a poem about a child's memory of picnics with small deviled ham sandwiches and lovely deviled eggs. The poem brought back good memories. Anyone here who still makes deviled eggs. I have not had them in ages, but I do love them <img src="/images/graemlins/heart.gif" alt="" />

LOL! About everyone who is losing weight on low carb diets is making deviled eggs at some point. Yep, they are delightful and always gone halfway through a party. I think of these as party food, and rarely make them except when I have a mission to bring an appetizer. At least I know I can eat the eggs without having a crisis of elevated blood sugar.

Now that they are in my head, I think I have to make some soon <img src="/images/graemlins/laugh.gif" alt="" /> Maybe just 1/2 dozen.
Mary Ellen you are right--I guess I think of them as party food also. If I boil an egg, which is seldom these days, I am doing to it make egg salad. Which I also love. I always use Colemans dry mustard in both. Yum!

Occasionally I make them at home, I boil two eggs and my husband and I get two halves each! At our astronomy club X-mas party, someone always brings them and they are the first to go. If you like it that much, why wait for a party?

Aime Yum!! I love deviled eggs. We always have them at Easter. And they aren't healthy for you, but we have to spoil ourselves sometimes <img src="/images/graemlins/wink.gif" alt="" /> I think the health factor is a part of the reason and the other is that they are party food. However, according to the American Egg Board <http://www.aeb.org/food/eggs-health.html> it is o.k. to have an egg a day. And if we stop thinking of them as party food <img src="/images/graemlins/music.gif" alt="" /> a deviled egg with sliced tomatoes, a few leaves of letttuce and a glass of iced tea will make a nice lunch.

If you like it that much, why wait for a party? Firefly, Making a couple at a time is a great idea. I will remember to do that. I have to laugh when you say they are the first to go. Once I went to what turned out to be 'bring only fancy food to the party' gathering. What did I bring?? deviled eggs. I sat them proudly on the table and they were the first to go. I have a beautiful deviled egg server.

OF course my tongue was out for one of those deviled eggs, but I was so busy coordinating the food, I was one of the last to fix a plate, and there was not a devil in sight. I learned my lesson! The next year I had people bring more, and snagged one while I was setting up the table. Ah, the perks of being the hostess! <img src="/images/graemlins/devil.gif" alt="" /> <img src="/images/graemlins/devil.gif" alt="" />

I make deviled eggs a lot. My kids actually request them from time to time.
