It's funny, we used to have one of those black completely open fryers and it was a HUGE pain to use. The oil splattered everywhere, it was a pain to clean, and we gave up. Then the news came that frying was evil so we were glad we had.
But nowadays if you look at all the low carb cookbooks they praise how great chicken wings are for you - as long as they are fried in HEALTHY OILS. We used to think all oils were bad, now we know some oils (like olive oils) are incredibly good for you!
So we got the covered Philips fryer with the removable inner lining -

It is just amazing how different a few years and a different outlook on life change your attitude on something like this. Also I think the easy to use fryer really helped a lot too <img src="/images/graemlins/smile.gif" alt="" />
