I like this one. Its not really "poppyseed cake", but it contains poppyseed <img src="/images/graemlins/smile.gif" alt="" />

I took it originally from

Maybe youll find some inspiration there.

Hawaiian Holiday Dessert

Total time: 8 minutes. Servings: 8

Ingredients: 1 (21-oz.) can cherry pie filling 2 (11-oz.) cans Mandarin orange sections drained 2 bananas peeld and sliced 1 cup pineapple chunks drained 1 tablespoon poppyseed 2 cups vanilla ice cream 1 pound pound cake sliced

Directions: Separate cherries from pie filling over a large bowl using a slotted spoon, allowing pie filling to fall into bowl. Meanwhile place cherries into a smaller bowl. Reserve pie filling. Combine cherries, mandarin sections, bananas, pineapple chunks and poppy seed in a large bowl; toss gently until mixed. Serve with pound cake and vanilla ice cream, spooning reserved pie filling over top.

Enjoy

Here you go! I haven't tried it myself, yet it looks reasonably easy.

INGREDIENTS:
1/4 cup poppy seeds
1 cup milk
3/4 cup butter, softened
1 1/2 cups granulated sugar
2 1/4 cups cake flour
1 1/2 teaspoons baking powder
4 egg whites, beaten stiff
1 teaspoon vanilla
.
Topping:
3/4 cup granulated sugar
1 tablespoon cornstarch
1 1/2 cups milk
4 egg yolks, beaten
1/2 cup chopped nuts
PREPARATION:
Soak poppy seeds in milk for 1 1/2 to 2 hours. Sift flour and baking powder together. In a mixing bowl, cream butter and sugar; add poppy seeds and milk alternately with flour and baking powder. Fold in egg whites and add vanilla. Bake in a lightly greased 9 x 13 x 2-inch pan at 325 for 1 hour.Spread with topping.
Topping: Mix together sugar and cornstarch. Add milk and egg yolks and cook in double boiler until thick, stirring constantly. Spread on cooled cake. Sprinkle with nuts.
