Many times when I make pecan pie, one or more of my pies do not gel in the center. Can someone please tell me what I am doing wrong.

When that has happened to me, I found that I had simply not baked the pie long enough. Then the trouble was that I had to put foil over the crust to keep it from getting burned while the pie was setting up. This was just my experience, maybe others have found other reasons?
