Australian double chocolate Mud Cake~

serves~~8

PRep~~ 15 mins + ( cooling time_



cooking~~5 mins

store in an airtight container in a cool place, this cake gets better with time.

INGREDIENTS~~

melted butter for greasing

200 grams (8ozs)good-quality dark cooking chocolate.chopped

�cup water

� cup cocoa powder..sifted

8t. espresso istant coffee powder

1 t. vanilla essence

1 cup caster sugar(superfine)

3 eggs (at room temp.)

�cupself raising flour

Method~~~

1... preheat oven to 160�C (325 �F. Brush a deep 22 cm 7� inch deep pan with the melted butter..

Line base with non-stick baking powder.

2.... Combine butter and vanilla in a medium saucepan.

cook whisking constantly, over a low heat. for 6-8 minutes until smooth and well combined.

remove from heat stand for 10 minutes until mixture is luke warm.

3...meanwhile usingelectric beaters. whisk the sugar into the eggs in a large mixing bowl until pale and creamy,

Whisk in the chocolte mixture,until well combined.

Add the flour & whisk until combined.

4.. pour mixture into the pepared cake pan, then bake in preheated ovenfor 55 minutesor until crumbs cling to a skewer, inserted in the centre of cake. (do not be concerned if surface, cracks a little )

5.. Remove from oven & stand in pan for 15 minutes, before turning onto a wire rack to cool.

6... Spread frosting over cooled cake.

leave to stand for 30 minutes or until icing is firm.

Cut the cake with a warm knife to prevent the icing from cracking...

CHOCOLATE ICING~~

150grams good-quality cooking chocolate, (roughly chopped) (5ozs)

185 mls (�cup cream)



Combine chocolate & cream in a heat resistant bowl and plCE over a saucepan of simmering water for 2-3 minutes, stiring occassionally or until melted & smooth.

remove from heat and allow to cool for 1� hours, whisking occassionally, until cooled to room temperature, and thickened o a spreading consistency
