I hesitate to admit it, but I really like meatloaf. Maybe it's because I rarely was forced to eat it as a child. Is there a good 'comfort food' meatloaf recipe that's not too tricky?

Hey Vivi,
I love meatloaf too. I found a recipe once in a Woman's Day magazine for mexican meatloaf that is so good and can be lowfat too if you use super lean ground beef.

mix
1lb of lean ground beef
1 egg
3/4 c bread crumbs
1 c salsa
1/4 c shredded monterrey jack, cheddar, or a mix of both
salt and pepper to taste
put in a loaf pan
bake for 1 hour

let me know if you like it? I also have another more traditional one but I don't like it as much and it has a lot more ingredients so it't not as easy to make. let me know if you want it though.

There really is a Home Cooking Host! Sorry about the long delay. I was determined to get my Home cooking and Dog sites looking good before I started a forum. Dog's is just about the way I want it, Home Cooking is "getting there", so here I am.

Have you tried Monica's meatloaf recipe? Sure does sound good. I just put an article about Meatloaf on my site. It's actually a revived article from last year, but I added some new recipes.

My new article is about Ground Beef. There's some good recipes there too, mostly easy one-dish meals.

this meatloaf recipe is unbelievable 4 pounds ground sirloin 3 cups Pepperidge Farm Herb Stuffing Mix, Not Cubes 4 cups Granny Smith apples or red sweet ones, finely chopped 6 eggs 4 teaspoons salt, or to taste 6 tablespoons horseradish sauce 2 onion, finely chopped 1 1/2 cups Ketchup, Heinz 4 tablespoons mustard 1. Preheat oven to 350* 2. Mix all ingredients together in a large bowl w/ a wooden spoon. This is a great meatloaf &amp; it freezes great. I recommend lining a jelly roll pan w/ heavy duty foil &amp; shaping the mix into a loaf &amp; place it on the foil. 3. Bake 1 1/2 hours or until cooked through. 4.While the meatloaf is baking reduce 16 ounces of apple juice to 1/3 cup, add 1/2 cup catsup and 1 tsp of Oriental 5 spice powder. Continued to cook until it thickened then poured it over the meat loaf during the last 15 minutes of baking. It forms a really nice rich glaze on top of the meat loaf - looks great and adds a little pizzaz to the finished product.

Need 2 large eggs, 1 drained can of diced tomatoes with sweet onions, one 8 oz can of tomato sauce, 1 pound of lean ground beef, 1 cup plain dry brain crumbs, 2 tablespoons packed dark brown sugar and no-stick cooking spray. First, mix the eggs, breadcrumbs, beef and diced tomatoes in a bowl. Next, line a baking sheet with foil and coat with the no-stick cooking spray. Take the meat mixture and form it into a loaf. In a separate bowl, mix the tomato sauce and sugar and set aside. Bake the meatloaf for 30 minutes, then remove and pour the tomato mixture over the top. Bake the meatloaf for an additional 25-30 minutes at 350 degrees and then serve. Add roasted potatoes and carrots by cutting the vegetables into bite-sized pieces and placing them around the meatloaf before baking. These is a great feel-good, one pan meal the whole family will love.

Ingredients 1 1/2 pounds ground beef 1 egg 1 onion, chopped 1 cup milk 1 cup dried bread crumbs salt and pepper to taste 2 tablespoons brown sugar 2 tablespoons prepared mustard 1/3 cup ketchup Directions Preheat oven to 350 degrees F (175 degrees C). In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish. In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf. Bake at 350 degrees F (175 degrees C) for 1 hour.

Make UR meatloaves or mini meat loaves for parties or freeze them. Tiny individual ones. Or get creative as I do with making a Cilante Meatloaf Stuffed (as I call them ~ one of mine is made with gr. chicken or gr. turkey lean and other goodies. Moist-tasty n firm. Others I stuff is made with lean gr. beef or pork others I have made is with beef n pork Chorizo's.

thought I would share my grandmas' meatloaf recipe. I have shared this with many people and even the pickiest of eaters seem to enjoy it. Hope you like

2lb. hamburger
3 or 4 slices of bread- torn
1 or 2 eggs
1 pkg. onion soup mix
1 can Cream of Mushroom soup

Mix meat, bread, eggs and onion soup mix together in bowl. form meat loaf in baking pan, pour can of soup on top. Bake at 350 degrees for 1 hour.
Grandma wet the bread a little to make it mix better.
