Lent, beginning with Shrove Tuesday, is an opportunity to get into the daily habit of meditation and prayer.

Shrove Tuesday and Lent Meditation

For Shrove Tuesday make easy potato pancakes and homemade applesauce as a side.

Potato pancakes to serve 2:
Wash and cut 3 potatoes and 1 onion in 1 inch cubes. Shred in blender and drain in colander.
Combine with 1 egg and 1/4 cup pancake mix or just enough to bring to batter consistency.
Fry pancakes over medium heat and keep warm in oven.

Homemade applesauce:
Peel and core apples and slice into pan with a small amount of water, stirring constantly over medium heat till fork tender. Mash with potato masher and add a small amount of sugar and cinamon to taste. Serve warm alongside pancakes.
